Ginger & Pineapple Punch

This is a perfect tipple for the end of a hot summer’s day.

I found myself, this week, in need of a cocktail that was equally delicious in both its boozy and virgin forms and given the hot weather I decided this was just the ticket!

Listed below are both variations in single servings.

Ingredients
Alcoholic ginger beer (I used Matsos from Broome, WA)
100g fresh pineapple
30ml Cointreau
30ml fresh lime juice
Plenty of ice
A sprig of pineapple sage

Virgin
Ginger beer (I used Bundaberg)
100g fresh pineapple
30ml fresh lime juice
Plenty of ice
A sprig of pineapple sage

Remove the skin of the pineapple, dice it and then blend until smooth. It will go a little frothy but that’s okay. Squeeze the lime juice into a shot measure. Half fill a tumbler or stemless glass with ice, pour over the ginger beer. Next add the lime juice and Cointreau (if needed). Finally pour in the pineapple and garnish with pineapple sage, mint also works wonderfully, and add a jaunty, summery straw or stirrer.

Best enjoyed outdoors in view of a lovely sunset! Xx
